Peel the potatoes. Cut the potato into bite-sized cubes. Wash the fresh ingredients. Beat the eggs and combine with a quarter cup of milk.
Heat a drizzle of olive oil over medium height in a pan or skillet. Once hot, add the potatoes. Cook covered for 7-8 minutes or until the potato has softened. Stir occasionally. Remove the potatoes from the skillet and place in a large mixing bowl.
Add the breakfast sausage to the skillet. Cook for 2-3 minutes or until the meat is cooked through. Remove from the pan and add to the same mixing bowl.
Add the cherry tomatoes and spinach to the pan. Stir frequently for 1-2 minutes or until spinach has softened. Remove from the skillet and add to the mixing bowl. Stir to combine with the other ingredients.
Add another tablespoon of olive oil to the skillet if it's too dry. Pour eggs into the skillet. Keep the egg moving using your spatula. Once cooked, remove the eggs from the skillet and place in the mixing bowl. Combine with the other ingredients.
Mix in the shredded cheese. Then, serve in a bowl or scoop into a tortilla to make this into a breakfast burrito.
