This protein-packed breakfast scramble recipe is a hearty way to jumpstart your morning. Savory breakfast sausage, fried potatoes, sweet cherry tomatoes, spinach, and farm-fresh scrambled eggs covered in your favorite toppings.

This is one of my favorite breakfast scramble recipes. I’ll make it in the kitchen most days, but there’s something about the winter air, the scent of cedar, and the smoky fire pit that makes cooking outside so wonderful.

My dream has always been to have a fire pit in my backyard. When we moved to our new house last year, that dream became a reality. Cooking outside over an open flame feels natural to me, like something us humans are supposed to do.

Breakfast is my favorite meal to cook outside. Waking up early, grabbing the cast iron skillet, and making the whole neighborhood curious about the amazing aroma coming from my yard is one of my favorite past times.

If you’re a breakfast fanatic like me, you’ll love this simple, easy to make scramble whether your outside or enjoying a cozy morning indoors.

This egg scramble is filling. Crispy potatoes, sausage, cheddar cheese, and fresh eggs make this a satisfying meal to fuel your busy mornings, workout, or next hike. Add some french toast or protein pancakes on the side, and you will stay full for several hours.

Ingredients

Eggs: You can’t do a breakfast scramble without eggs. Eggs are a great source of all nine essential amino acids. They’re high in Vitamin D and Choline, which are good for your brain. Add two eggs for each person you’re cooking for, and you will have plenty to go around.

Milk (Optional): I like to add a quarter cup of milk to the eggs to make sure they come out nice and fluffy.

Spinach: Fresh spinach is a great way to get your daily leafy green serving. Spinach is high in calcium, Vitamin K, and manganese, all of which play essential roles in improving bone health. Spinach is also a great source of iron.

Breakfast Sausage: I recommend savory ground sausage from the butcher. If the butcher doesn’t have ground sausage, breakfast sausage links will also work. You will want to cook the links for a bit, then break them up with a wooden spoon to mix them into the scramble.

Potatoes: I love potatoes for breakfast. Whether it’s hash browns, diced, or even sweet potatoes, I love it. Potatoes not only taste great, but they’re also great for you. Potatoes are high in Vitamin C and potassium.

Cherry Tomatoes: Cherry tomatoes are the easiest part of this recipe. You don’t need to cut them, slice them, or dice them. Give them a quick wash and toss them in the pan. After a few minutes, they will soften and burst with flavor. Cherry tomatoes are rich in the carotenoid Lycopene, which fights disease-causing free radicals in the body.

Cheese (Optional): If you like cheese, you will love it in this scramble.

Toppings

Toppings are your chance to customize this dish to your liking. Here are a few ideas:

  • Crispy bacon
  • Green onions
  • Sour cream
  • Pico de Gallo
  • Salsa verde
  • Avocado

  • Tortilla strips

Equipment

You’ll need a few items that you likely already have around your kitchen to make this recipe.

Skillet or Frying Pan: A medium or large skillet will do the trick.

Wooden Spoon and Spatula: The wooden spoon is excellent for breaking apart the breakfast sausage. The edged of the spatula works better for preventing the egg from sticking to the bottom of the pan.

Mixing Bowl: You’ll need a large mixing bowl to combine the ingredients.

How to Make This Breakfast Scramble Recipe

Prepare the Ingredients

  • Peel three small russet potatoes. Cut the potatoes into bite-sized cubes.
  • Rinse the spinach. Set aside to dry.
  • Wash the cherry tomatoes and remove any stems.
  • Crack the eggs into a medium bowl. Beat the eggs until the yolk and egg whites have combined. Mix in a quarter cup of milk.

Give the Potatoes a Head Start

The potatoes will take the longest to cook. It can help to cover the skillet with a lid to allow the potatoes to soften without burning the sides. Cook over medium heat for 7-8 minutes then place the potatoes in the large mixing bowl. Set aside.

Cook the Remaining Ingredients

Add the Sausage

Add the breakfast sausage to the pan. Cook for 2-3 minutes or until cooked through. Once cooked, remove from the skillet and add to the same mixing bowl as the potatoes.

Add the Veggies

Add your spinach and cherry tomatoes to the skillet. Simmer for another 2-3 minutes or until the spinach has wilted and the tomatoes have softened. Add the spinach and tomatoes to the mixing bowl. Stir to combine with the other ingredients.

Add the Eggs

Pour the beaten eggs into the pan. Keep the eggs moving to prevent them from sticking. Once cooked, add the eggs to the same mixing bowl. Stir to combine. Season with salt and pepper if desired.

Add the Cheese

If using cheese, make sure it’s shredded. Mix a 1/4 cup of cheese into the mixing bowl, stirring for 1-2 minutes or until melted.

What to Serve With This Breakfast Scramble Recipe?

All of your breakfast favorites will go great with this breakfast skillet. Fresh fruit, cinnamon rolls, pancakes, or a side of toast will make this meal even more filling. You can also scoop the scramble into a tortilla to make a tasty breakfast burrito.

Ingredients

  • 7 eggs
  • 1/4 lb breakfast sausage
  • 3 russet potatoes
  • 1/4 cup milk
  • 1/4 cup cheddar cheese
  • 2 cups cherry tomatoes
  • 2 cups spinach
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  • Peel the potatoes. Cut the potato into bite-sized cubes. Wash the fresh ingredients. Beat the eggs and combine with a quarter cup of milk.
  • Heat a drizzle of olive oil over medium height in a pan or skillet. Once hot, add the potatoes. Cook covered for 7-8 minutes or until the potato has softened. Stir occasionally. Remove the potatoes from the skillet and place in a large mixing bowl.
  • Add the breakfast sausage to the skillet. Cook for 2-3 minutes or until the meat is cooked through. Remove from the pan and add to the same mixing bowl.
  • Add the cherry tomatoes and spinach to the pan. Stir frequently for 1-2 minutes or until spinach has softened. Remove from the skillet and add to the mixing bowl. Stir to combine with the other ingredients.
  • Add another tablespoon of olive oil to the skillet if it's too dry. Pour eggs into the skillet. Keep the egg moving using your spatula. Once cooked, remove the eggs from the skillet and place in the mixing bowl. Combine with the other ingredients.
  • Mix in the shredded cheese. Then, serve in a bowl or scoop into a tortilla to make this into a breakfast burrito.
